As we have said before the Springviews Chardonnay block is one which causes us the most headaches during the growing season, however it is one of the best chardonnay sites in the Great Southern in our opinion. Sites which produce complex and character driven wines are pretty hard to find, especially with 35+ years of history. The Springviews Chardonnay is the most elevated parcel on the property with varying soil depth across the ~2 hectares and produces mineral, very citrus driven wines with complexity. An improvement in yield in 2021 after several very small crops, although still very modest. Bunch size was small with no more than single bunch per shoot. We hand-harvested in two passes, chilled and whole bunch pressed with full solids to Burgundian oak. As has been the case for this wine, no new oak but mostly 2nd and 3rd fill oak, which gives impact while not being overbearing. Slow fermentation naturally (wild) and matured for 10 months before bottling. A very pure wine with line and length in 2021, citrus and soda, subtle stone fruit, with classic almond meal complexity. If you can hang onto some in the cellar I think you will be rewarded.
